Basic Vinaigrette
1/3 cup Wine Vinegar
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2/3 cup B.R. Cohn Extra Virgin Olive Oil
Whisk together salt and vinegar. Add pepper and oil and whisk again. Pour immediately over salad. Makes 1 cup for 8 servings.
For taste variations use 1 tsp. of dried herbs or 1 tbs. dijon mustard or try capers. If you like cheese add it directly to the salad and not the vinaigrette.
